Buying and Saving Bok Coy

When buying, look for bunches with stems that are firm and free of brown spots.
To store it, wrap it in paper and store it in the refrigerator. These vegetables can last in the refrigerator shelf for a week.
Preparation and How to cook
With full size bok choy, separate the leaves from the stems, as thicker stems take longer to cook. Rinse and drain, then shred or chop the leaves, and cut the stems into small slices along the diagonal.
Saute the bok choy briefly, season with salt, then add a little water or chicken stock and simmer for a few minutes. Add fresh ginger and sesame oil to liven up this easy stir fry.
